Cooking Instructions

Step 1

Let’s make delicious fish cake and cheese rolls using two sheets of flat fish cake from the freezer, filled with melty string cheese. They’re simple yet perfect as a snack or lunchbox side dish.

Step 2

First, briefly blanch the flat fish cakes in boiling water. This helps to remove excess oil and makes the fish cakes softer, ensuring a cleaner flavor.

Step 3

We’ll be using two string cheese sticks. These were a gift for Labor Day at my son’s work, and I’m happy to use them in this recipe. Even simple ingredients can be transformed into something special.

Step 4

Here are the ingredients for the fish cake and cheese rolls: 2 sheets of flat fish cake and 2 string cheese sticks. These are the stars of this dish.

Step 5

Next, we’ll prepare a colorful rolled omelet. Crack 4 eggs into a bowl, add 1 tsp of salt, and whisk them well to break the egg yolks and create a smooth, golden mixture. Whisk until the egg mixture is evenly blended.

Step 6

Lay a sheet of blanched fish cake flat, place a string cheese stick in the center, and roll it up tightly. Don’t worry if the seam doesn’t stick perfectly; you can secure it with a toothpick to prevent it from unraveling during cooking. Dip the rolled fish cake into the whisked egg mixture, coating both sides. Then, cook over low heat, turning occasionally, until golden brown and cooked through. Be careful not to burn it.

Step 7

As the fish cake rolls cook, you can see the cheese melting inside, which looks incredibly appetizing! When eaten warm, the gooey cheese and chewy fish cake create a delightful combination.

Step 8

Once cooked, cut the fish cake and cheese rolls in half. Secure each half with a toothpick to help them hold their shape, making them easy to pack in a lunchbox.

Step 9

We’ll place the cut rolls in the lunchbox and then drizzle them with steak sauce. The sweet and savory sauce will enhance the flavors of the fish cake and cheese.

Step 10

For the rolled omelet, we’ll use the leftover egg mixture and add some colorful chopped vegetables. Finely chop 1/4 red bell pepper. This will add a lovely vibrant color to the omelet.

Step 11

Also, finely chop 2 green onions. Their mild aroma will complement the richness of the eggs.

Step 12

Combine the chopped vegetables with the remaining egg mixture and stir well. Pour this mixture into a lightly oiled pan and cook, rolling it up to create a beautiful rolled omelet. A rolled omelet is always a crowd-pleaser that satisfies the palate.

Step 13

By pouring the egg mixture thickly and rolling it carefully, we’ve created a wonderfully thick and appealing rolled omelet.

Step 14

Finally, let’s stir-fry some leftover sausages from the fridge to make the lunchbox more substantial. Make diagonal cuts on the sausages and sauté them in a pan with 1 Tbsp of cooking oil until lightly browned. Add the julienned vegetables (bell peppers, onion), 2 Tbsp of soju (or cooking wine), and 2 Tbsp of ketchup. Stir-fry until the vegetables are tender and the sauce has thickened slightly. The soju helps to eliminate any gamey smell from the sausages.

Step 15

The sizzling sound and the delicious aroma filling the air indicate that this stir-fry is cooked to perfection.

Step 16

Now, I’ll neatly arrange all these delicious homemade dishes into the lunchbox. I’m packing them with a mother’s heartfelt wish for my son to enjoy them with his colleagues and have a productive day, sending along love and care. Have a wonderful day filled with the warmth of home-cooked meals!
