Essential Ingredients- 3 strips brown rice garae-tteok (rice cakes, approx. 300g)
- 2 packs of square fish cakes or fish cake sticks
- 1 handful of dried seaweed (soaked, approx. 50g)
- 5 cups (1L) anchovy-kelp broth
- 1 tsp minced garlic
- 1 tsp soy sauce (joseon ganjang)
- A little chopped green onion (for garnish)
Cooking Instructions
Step 1
First, prepare the ingredients for the tteokguk. Slice the brown rice garae-tteok into bite-sized pieces, about 1cm thick. You can also use white garae-tteok. For the fish cakes, briefly blanch them in boiling water to remove excess oil for a cleaner taste. Slice the blanched fish cakes into similar sizes as the rice cakes.
Step 2
Soak the dried seaweed in cold water for about 10 minutes until softened, then squeeze out excess water. Pour 5 cups of anchovy-kelp broth into a pot and bring it to a boil over high heat. Once the broth is boiling, add the soaked seaweed and let it simmer for a bit. Add 1 teaspoon of soy sauce for seasoning, then add the sliced rice cakes and cook until they become soft and tender.
Step 3
Once the rice cakes are somewhat cooked, add 1 teaspoon of minced garlic and mix well. Finally, add the sliced fish cakes and cook for just 1-2 more minutes. Since fish cakes are pre-cooked, avoid boiling them for too long to prevent them from becoming mushy. Taste the soup and add more salt or soy sauce if needed to adjust the seasoning.
