Main Ingredients- Salted sea mustard stems 500g
- Carrot 25g (approx. 1/4 medium)
- Scallions 3 stalks
- Onion 1/3 medium (approx. 40g)
Cooking Instructions
Step 1
First, it’s crucial to remove the salt from the salted sea mustard stems. Rinse them thoroughly under running water multiple times. Then, soak them in fresh water for about 15 minutes to let the excess salt seep out. This step helps to moderate the saltiness, making them much more palatable.
Step 2
After soaking, gently squeeze out the water from the sea mustard stems by hand. Be careful not to squeeze too hard, as this can make the texture tough. Cut them into 2-3 segments for easier handling while stir-frying. If they are too long, they can be awkward to eat.
Step 3
Prepare the vegetables. Thinly julienne the onion and the carrot. Slice the scallions diagonally into about 2-3 cm lengths. Slicing the vegetables this way ensures even cooking and adds visual appeal to the dish.
Step 4
Now, let’s start stir-frying! Heat 3 tablespoons of rice bran oil in a preheated frying pan. Add the prepared sea mustard stems and stir-fry over medium heat for about 2 minutes. This process helps to enhance the chewy texture of the sea mustard stems.
Step 5
Once the sea mustard stems are slightly stir-fried, add the julienned carrots and onions. Then, add 1 tablespoon of soy sauce, 1/2 tablespoon of plum extract, and 1 tablespoon of minced garlic. Stir well to combine. Continue to stir-fry over medium-low heat for another 7-8 minutes until the vegetables are tender and the flavors meld together. Cook until the sea mustard stems are fully tender.
Step 6
Finally, just before turning off the heat, add the prepared scallions, 1/2 tablespoon of toasted sesame seeds, 1 tablespoon of sesame oil, and a pinch of black pepper. Quickly toss everything together until well combined. The aromatic scent of sesame oil and seeds will signal that your delicious stir-fried sea mustard stems are ready!
