Donut Dough Ingredients- 50g Bread Flour
- 145g Hot Water
- 5g Baking Powder
- 1g Salt
- 45g Sugar
- 200g Glutinous Rice Flour

Cooking Instructions
Step 1
This recipe creates glutinous rice donut dough without butter. If you prefer to include butter, you can add about 20-30g of butter during the dough-making process.
Step 2
In a large bowl, combine the bread flour, glutinous rice flour, baking powder, salt, and sugar. Whisk them together lightly. Pour in the hot water and mix with a spatula or your hands until a cohesive dough forms and no dry flour remains. This is a scalded dough method, so the dough will be hot. Be careful!
Step 3
Scalded dough made with glutinous rice flour tends to dry out very quickly. To prevent this, make sure to cover the dough with plastic wrap or a damp kitchen towel.
Step 4
Divide the dough into portions of approximately 30g each and shape them into balls. Let these dough balls rest at room temperature for 30 minutes. If you are using freshly ground glutinous rice flour or bread rice flour, you can skip this resting period and proceed directly to frying.
Step 5
While the dough is resting, keep it covered with plastic wrap or a damp cloth to prevent the surface from drying out. Covering it with multiple layers will be even more effective.
Step 6
Preheat the frying oil to about 170°C (340°F). If you don’t have a thermometer, aim for a heat slightly stronger than medium-low. Carefully place the shaped dough balls into the hot oil, a few at a time to avoid overcrowding. Fry for 5 to 7 minutes.
Step 7
Continue frying the donuts until they are a beautiful golden brown color, turning them occasionally to ensure even cooking. Be mindful of the heat; if the oil is too hot, the outside will burn before the inside is cooked.
Step 8
