Glutinous Rice Pancake Ingredients

  • 250g glutinous rice flour
  • 1 egg
  • A little sweetened red bean paste (or other sweet bean paste)
  • A little crushed peanuts (or chopped nuts)
  • 30g sugar (adjust to taste)
  • 3g salt
  • 200g milk (adds tenderness)
  • Butter (for greasing the pan), a small amount

In a bowl, crack 1 egg. Add 30g of sugar and 3g of salt. Whisk gently with a whisk until the sugar dissolves.

Slowly pour in the 200g of milk while mixing until no lumps remain. The batter should be pourable but slightly thick, a bit thicker than pancake batter. The consistency is key for achieving the right chewy texture. Make sure to check the batter’s consistency carefully.

Now, add your desired ingredients like sweetened red bean paste (or other sweet beans) and crushed peanuts (or your favorite nuts) to the batter and mix well. These will add a pleasant chew and nutty flavor. Don’t add too much, or the batter might become too stiff.
