Chewy Handmade Pasta Tteokbokki

Hello everyone! Today, I’ll be sharing the recipe for ‘Handmade Pasta Tteokbokki’ that captivated even Jung Woo-sung’s taste buds on the popular variety show ‘Three Meals a Day: Mountain Village’! I initially thought, ‘It’s just another tteokbokki,’ but it had a surprising twist that truly amazed me. Enjoy this special tteokbokki, a perfect harmony of chewy handmade pasta and sweet and spicy tteokbokki sauce, easily and deliciously made at home!
Main Ingredients- 1/2 onion, julienned
- 1/4 potato, diced
- Shredded cabbage, a portion
- 1 bowl of cooked rice (for dough)
- 7 perilla leaves
- 1/2 green onion, chopped
- 100g all-purpose flour
- 3 sheets of fish cake, cut into bite-sized pieces
- 15 tteokbokki rice cakes
- 800-1000ml broth or water
Seasoning Ingredients- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp plum extract
- 2 Tbsp soy sauce
- 1 Tbsp anchovy extract
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp minced garlic
- 2 Tbsp gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, let’s make the chewy handmade pasta dough. In a bowl, add 100g of flour and a pinch of salt. Gradually add water while mixing until a dough forms. Adjust the consistency so it’s not too sticky or too dry. Wrap the finished dough in plastic wrap and let it rest for a while; this will make it even chewier.
Step 2
Pour 800-1000ml of broth or water into a pot and bring it to a boil. Don’t worry too much about the exact amount initially, as you can always add more water or broth if it reduces during cooking. Now, let’s prepare the delicious sauce: combine 2 Tbsp gochujang, 1 Tbsp plum extract, 2 Tbsp soy sauce, 1 Tbsp anchovy extract, and 2 Tbsp gochugaru. Mix them well.
Step 3
Once the broth is boiling vigorously, add the diced potato and julienned onion first, and let it boil for a bit. When the potatoes are partially cooked, add the shredded cabbage and 1/2 Tbsp minced garlic. Cook over high heat until the potatoes are more than halfway done. The vegetables will release their sweetness, adding depth to the broth.
Step 4
When the vegetables are about half-cooked, reduce the heat to medium. Add the tteokbokki rice cakes that have been soaked in water and the cut fish cakes. Remember to stir occasionally with a spatula to prevent them from sticking to the bottom of the pot.
Step 5
Bring it back to a boil after adding the rice cakes and fish cakes. Then, gradually drop pieces of the rested dough into the pot. Cook until the handmade pasta pieces float to the surface, indicating they are cooked. Depending on the stove’s heat and the ingredients’ moisture, the water might reduce. If needed, add about 50ml of water or broth and continue cooking until the pasta is fully done.
Step 6
When it’s almost ready, add the roughly chopped perilla leaves and chopped green onions for a fragrant finish. If you taste it and find it a bit bland, adding a little more water or broth won’t ruin the flavor, so don’t hesitate! Once all the ingredients have melded together, your delicious Handmade Pasta Tteokbokki is complete. Enjoy this hearty and chewy dish!
