Brownie Ingredients- 100g unsalted butter
- 200g dark chocolate (couverture recommended)
- 3 large eggs
- 100g white granulated sugar
- 70g brown sugar
- 22g water
- 150g cake flour, sifted
- 20g cocoa powder, sifted
- 1 shot (30ml) espresso
- 100g walnuts (or your preferred nuts)
Cooking Instructions
Step 1
Prepare a double boiler by placing a heatproof bowl over a saucepan with simmering water. Add the butter and dark chocolate to the bowl and stir until completely melted and smooth, ensuring no water gets into the chocolate. This prevents separation.

In a separate bowl, combine the white and brown sugars with the warm water. Whisk until the sugars are fully dissolved.

Crack the eggs into a clean bowl. Pour in the dissolved sugar mixture from step 1. Whisk thoroughly with a whisk until no sugar granules are felt. This step is crucial for eliminating any eggy smell and fully dissolving the sugar.

To the melted chocolate and butter mixture (after it has cooled slightly), add the shot of espresso and mix well. The espresso will deepen the chocolate flavor beautifully.

Gently pour the cooled chocolate mixture into the bowl with the eggs and sugar. It’s important that the chocolate isn’t too hot, or it might cook the eggs. Let it cool down to a lukewarm temperature.
