First, let’s prepare the cockles to remove any grit and ensure a clean flavor. Place the cockles in a large bowl. Add about 1 tablespoon of coarse salt and enough cold water to fully submerge them. Gently scrub the cockles together 2-3 times to clean them thoroughly. Rinse and drain. Return them to the bowl, add more cold water, and another tablespoon of coarse salt. Cover the bowl tightly with a dark plastic bag and let them purge (de-grit) in a cool place for at least one hour. This process encourages the cockles to open their shells and expel any impurities.
