Step 1
First, prepare the vegetables. Peel the onion and carrot and slice them into thin julienne strips. Wash and finely chop the green onion. Having the vegetables prepped makes the stir-frying process much smoother.

Wash the king oyster mushrooms and trim off the base. Slice them into approximately 0.8cm thick pieces, then cut each slice into three bite-sized portions. This cutting method helps enhance the mushroom’s texture when cooked.

Cut the square fish cakes into long, finger-sized strips, about 1cm thick. Briefly blanch the cut fish cakes in boiling water to remove excess oil; this makes them taste cleaner and less greasy. After blanching, rinse them under cold water and squeeze out any excess moisture.
