Super Simple Side Dish: Chewy King Oyster Mushroom and Fish Cake Stir-Fry!
I’ve been enjoying combining different ingredients lately, and it’s been so much fun! Adding chewy king oyster mushrooms to a stir-fried fish cake dish has earned it a prime spot on my side dish table tonight. It’s incredibly simple, so please give it a try! You’ll love it.
Main Ingredients- 3 sheets of square fish cakes
- 1/2 onion
- 2 king oyster mushrooms (medium-sized)
Seasoning Ingredients- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp cooking wine (like Mirin)
- 2 Tbsp water
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp anchovy sauce (or substitute with regular soy sauce)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- A pinch of black pepper (to taste)
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp cooking wine (like Mirin)
- 2 Tbsp water
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp anchovy sauce (or substitute with regular soy sauce)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- A pinch of black pepper (to taste)
Cooking Instructions
Step 1
First, prepare all the ingredients for stir-frying. Peel and thinly julienne half an onion. Cut the 3 sheets of square fish cakes into bite-sized strips, about 1cm thick. Wash the 2 medium-sized king oyster mushrooms, pat them dry, and then julienne them to a similar length as the fish cakes. Julienne mushrooms absorb the sauce better and taste even more delicious.
Step 2
In a small bowl, combine all the seasoning ingredients to make the sauce. Mix 3 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp cooking wine, 1 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp minced garlic, 1 Tbsp anchovy sauce, and a pinch of black pepper. Stir well until the sugar is dissolved.
Step 3
Heat a pan over medium heat and add a little cooking oil. Add the julienned fish cakes and stir-fry until they become slightly softened. Stir-frying the fish cakes first helps to render out excess oil and gives them a chewier texture.
Step 4
Once the fish cakes are somewhat softened, add the julienned onion and king oyster mushrooms. Stir-fry them together. The mushrooms might release some moisture, so adjust the heat to medium-low while stir-frying.
Step 5
As the ingredients begin to cook, pour in all the prepared sauce. Mix well to ensure the sauce coats all the ingredients evenly.
Step 6
After adding the sauce, continue to stir-fry until the onions become translucent and the mushrooms have softened. It’s important to stir the pan occasionally to prevent the sauce from burning.
Step 7
Finally, turn the heat up to high and stir-fry quickly for about 1-2 minutes until the sauce thickens and coats the ingredients well. Be careful not to burn it as the sauce reduces. This completes your simple and delicious side dish.
Step 8
Just before turning off the heat, sprinkle with sesame seeds and drizzle with 1 Tbsp of sesame oil (or perilla oil) for a glossy finish.
