Chewy King Oyster Mushroom Pancakes
Making Delicious King Oyster Mushroom Pancakes at Home
Hello there! As the saying goes, ‘rice is the strength of a nation,’ and today’s recipe is one that will surely power your meals: ‘King Oyster Mushroom Pancakes.’ King oyster mushrooms, a cultivated variety of oyster mushrooms, are also known as large oyster mushrooms or king oyster mushrooms. They boast a wonderfully chewy texture and a rich aroma that makes them truly appealing. Originally from Southern Europe, they are now found globally. A key advantage of king oyster mushrooms is their lower moisture content compared to other mushrooms, which gives them a longer shelf life. Storing them wrapped in newspaper in the refrigerator helps maintain their freshness. These mushrooms are packed with Vitamin C, essential amino acids, and minerals like calcium and iron, making them incredibly beneficial for our health. Good quality king oyster mushrooms are firm, elastic, and have a subtle, delightful fragrance. Today, we’ll transform these delicious mushrooms into pan-fried pancakes that are crispy on the outside and tender on the inside, loved by everyone from children to adults. Since they are simple to make at home, be sure to follow along!

Cooking Instructions
Step 1
First, prepare your clean king oyster mushrooms. Trim off any dirty parts from the base of the mushrooms with a knife.
Step 2
It’s important to maintain the mushroom’s shape! Slice the king oyster mushrooms into rounds about 0.5 cm thick. If they’re too thin, they might break apart easily, and if they’re too thick, they’ll take a long time to cook through. Aim for a moderate thickness.
Step 3
Now, let’s make the ‘oil marinade’ that will add flavor to the mushrooms. In a bowl, combine 2 tablespoons of sesame oil and 1 teaspoon of salt. Mix them well. The nutty aroma of sesame oil and the savory saltiness will elevate the mushroom’s taste.
Step 4
Brush the prepared oil marinade evenly onto one side of each mushroom slice. You can use a spoon or a culinary brush for easy application. Let the mushrooms marinate for about 10 minutes; this allows the seasoning to penetrate, resulting in more flavorful pancakes.
Step 5
In a separate bowl, whisk the 2 eggs until the chalazae (the white stringy bits) are broken up and the eggs are smooth. It’s best not to add salt at this stage, as salt can sometimes cause the egg mixture to curdle or separate. You can always adjust the seasoning with the soy sauce later.
Step 6
Now, coat the marinated mushroom slices evenly with flour (all-purpose or pancake mix) on both sides. After coating, gently tap off any excess flour. This step helps the egg wash adhere better and prevents the batter from becoming too thick.
Step 7
Dip the floured mushroom slices into the beaten egg mixture, coating both sides. Ensure the egg wash evenly covers the surface of the mushrooms.
Step 8
Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, carefully place the egg-coated mushroom slices into the pan. Cook until one side is golden brown and set, about 2-3 minutes. Avoid overcrowding the pan.
Step 9
Once the first side is nicely browned, flip the mushroom pancakes and cook the other side until golden brown as well. If too much oil accumulates, the pancakes can become greasy, so you can lightly dab the pan with a paper towel in between cooking to remove excess oil for a lighter finish.
Step 10
Your delicious king oyster mushroom pancakes are now ready! Enjoy these chewy and savory treats while they are warm, served with the simple soy-vinegar dipping sauce. They make a fantastic snack for kids or a great accompaniment to drinks!
