Main Ingredients- 3 King Oyster Mushrooms (medium size)
- 20 Korean Hot Peppers (Kwari Gochu)
- 1/4 Onion
- 1/2 Green Onion
- 1 Red Chili Pepper (optional)
Seasoning Ingredients- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Soup Soy Sauce)
- 2 Tbsp Rice Wine (Mirin)
- 1 Tbsp Oligosaccharide (or Corn Syrup)
- 1 Tbsp Chili Oil (adjust for spice level)
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil (or Sesame Oil)
- 0.5 Tbsp Cooking Oil
- A pinch of Toasted Sesame Seeds
- A pinch of Black Pepper
- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Soup Soy Sauce)
- 2 Tbsp Rice Wine (Mirin)
- 1 Tbsp Oligosaccharide (or Corn Syrup)
- 1 Tbsp Chili Oil (adjust for spice level)
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil (or Sesame Oil)
- 0.5 Tbsp Cooking Oil

Cooking Instructions
Step 1
First, select medium-sized King Oyster mushrooms for this dish. If you can’t find Korean hot peppers, you can omit them, but adding them will enhance the flavor and color of the dish.
Step 2
Slice the prepared King Oyster mushrooms into thick pieces, about 0.5 to 0.7 cm thick. Slicing them too thinly might make them mushy when stir-fried, so maintaining a good thickness is key. (Although not pictured, finely mince 1/4 onion. Also, remove seeds from the Korean hot peppers and red chili pepper and chop them into appropriate sizes. The red chili pepper adds a nice color.)
Step 3
In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp rice wine, and 1 Tbsp chili oil. Mix well to create the seasoning base. If you prefer a spicier dish, add chili oil. For milder palates or if serving to children, you can omit the chili oil.

To the base seasoning, add the remaining ingredients: 1 Tbsp fish sauce, 1 Tbsp oligosaccharide, and 0.5 Tbsp minced garlic. Stir everything together thoroughly to form the complete sauce.

Add the minced onion, chopped Korean hot peppers, and red chili pepper to the prepared sauce. Mix well and let it sit for a few minutes to allow the flavors to meld together.

When the mushrooms and peppers are well-coated and cooked with the sauce, just before turning off the heat, stir in 1 Tbsp of perilla oil (or sesame oil) and a pinch of black pepper. This adds a wonderful nutty aroma and flavor. You can use sesame oil if perilla oil is unavailable.
