Chewy Konjac and Aromatic Garlic Scapes Stir-fry
Konjac and Garlic Scapes Stir-fry Recipe!
We’ve made a simple stir-fried side dish with garlic scapes and konjac.
Ingredients
- 200-300g garlic scapes (washed clean and cut into 5-6cm lengths)
- 100-150g konjac (cut into similar size as garlic scapes)
- 1 red chili pepper (seeds removed and finely chopped)
Seasoning
- 2 Tbsp olive oil
- 1 Tbsp oyster sauce
- 1 tsp fish sauce (or tuna extract)
- 2-3 Tbsp oligosaccharide (adjust sweetness to your preference)
- 1 Tbsp cooking sake (mirin or rice wine)
- A little sesame oil
- A little toasted sesame seeds
- 2 Tbsp olive oil
- 1 Tbsp oyster sauce
- 1 tsp fish sauce (or tuna extract)
- 2-3 Tbsp oligosaccharide (adjust sweetness to your preference)
- 1 Tbsp cooking sake (mirin or rice wine)
- A little sesame oil
- A little toasted sesame seeds
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly under running water. Pat them dry to remove excess moisture, then cut them into bite-sized pieces, about 5-6cm long.
Step 2
Next, prepare the red chili pepper. Remove the stem, slice it in half, and thoroughly scrape out the seeds. Then, finely chop or mince it. This will add a beautiful color to the dish.
Step 3
Now, let’s start stir-frying! Heat a pan over medium heat and add the cut garlic scapes along with 2 tablespoons of olive oil. Sauté the garlic scapes for a minute or two until they start to become fragrant.
Step 4
Once the garlic scapes have softened slightly, add the konjac. Pour in 1 tablespoon of oyster sauce, 1 teaspoon of fish sauce, 2-3 tablespoons of oligosaccharide, and 1 tablespoon of cooking sake. Mix everything well. Tip! To remove any unpleasant smell from the konjac, you can blanch it in boiling water with 1 teaspoon of vinegar for about a minute before adding it. This will make it taste much cleaner. Make sure to cut the konjac into pieces similar in size to the garlic scapes for a harmonious texture. Feel free to adjust the amount of oligosaccharide to suit your taste.
Step 5
Increase the heat to high and stir-fry for 3-4 minutes, ensuring all the ingredients are coated evenly with the sauce. You’ll notice a wonderful aroma developing. Finally, add the chopped red chili pepper and stir-fry for just one more minute. This will add a vibrant color and a pleasant crispness.
Step 6
Just before turning off the heat, drizzle in a little sesame oil and sprinkle some toasted sesame seeds. This will enhance the nutty aroma and give the dish a beautiful sheen.
Step 7
It’s important to transfer the finished stir-fry to a separate serving dish immediately. If left in the hot pan, the residual heat can cause the garlic scapes to overcook and become mushy. Enjoy your delicious and fresh stir-fry!
