Chewy Momuja and Savory Beef: A Special Recipe for Royal Stir-fried Rice Cakes

Home cooking is often about making do with what you have rather than sticking to a perfect recipe. I found myself wanting to make royal stir-fried rice cakes (gungjung tteokbokki), but without any rice cakes (tteok). Instead, I decided to use ‘momuja’, a chewy Korean glass noodle product, in its place. This recipe offers a delightful twist on a classic, perfect for a satisfying home-cooked meal.

Main Ingredients

  • 250g Beef Bulgogi cut
  • 250g Momuja (Korean tapioca noodles)
  • 1 handful Cabbage (approx. 1/4 medium cabbage)
  • 1/4 Onion
  • 1 handful Enoki mushrooms
  • 1 stalk Green onion
  • Cooking oil, as needed

Royal Stir-fry Seasoning

  • 3 Tbsp Soy sauce
  • 2 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Sesame oil
  • Pinch of Black pepper
  • Chopped green onion, for garnish

Cooking Instructions

Step 1

First, cut the beef into bite-sized pieces to make it easier to eat. In a bowl, combine the cut beef with soy sauce, sugar, minced garlic, mirin, sesame oil, and black pepper. Mix well to ensure the seasoning coats the meat evenly. Marinating the beef will enhance its flavor.

While the beef is marinating in the refrigerator, prepare the other vegetables and momuja. This resting period allows the beef to become more tender and absorb the flavors more deeply.

Chop the cabbage into large pieces after removing the core. Slice the onion into similarly large pieces. Trim the base of the enoki mushrooms and separate them into manageable clumps or chop them. Cutting the vegetables into larger chunks will help maintain their texture and visual appeal when cooked.

Momuja comes in various shapes and sizes depending on the brand. You can cut them into your desired length to match the other ingredients or for easier eating. If you cut them, soak them briefly in cold water to prevent them from sticking together.

Heat a frying pan over medium heat and add 1-2 tablespoons of cooking oil. Add the chopped green onion and sauté over low heat until fragrant, creating infused green onion oil. This step builds a foundational flavor for the dish. Be careful not to burn the green onions; cook until their aroma is released.

Once the green onion oil is fragrant, add the large pieces of cabbage first. Cabbage takes a bit longer to cook than other vegetables, so sautéing it first until it becomes slightly translucent will bring out its natural sweetness and ensure it’s tender.

When the cabbage starts to turn translucent, add the marinated beef to the pan. Increase the heat to high and stir-fry quickly until the beef is about halfway cooked. Stirring continuously will prevent the beef from clumping and add a pleasant ‘wok hei’ (breath of the wok) flavor.

Once the beef is about half-cooked, add the enoki mushrooms and onions. Stir-fry until the vegetables begin to soften. Drain the momuja from the water and add it to the pan. Continue to stir-fry everything together. Momuja may take slightly longer to cook than the vegetables, so ensure it cooks through.

Continue stir-frying for another 2-3 minutes until all the ingredients are well combined and the momuja is tender yet chewy. Your Momuja Royal Stir-fried Dish is now complete! For an extra touch of flavor, you can drizzle a little sesame oil or garnish with the chopped green onion. Serve immediately for the best taste and texture.
