Introducing ‘Mushroom and Egg Soy-Braised Dish,’ featuring the fantastic combination of chewy mushrooms and tender eggs, simmered in a savory soy sauce-based glaze. This is a perfect side dish to make in advance, ensuring a well-stocked pantry for the week.
Main Ingredients- Baby King Oyster Mushrooms (250-300g)
- Quail Eggs (1 tray, approx. 20 eggs)
- Kelp Broth (1 cup / 200ml)
- Minced Garlic (1 Tbsp)
- Ginger Powder (0.2 tsp, or a little ginger juice)

- Cooking Wine (Mirin) (2 Tbsp)
- Sugar (0.5 Tbsp)
- Oligosaccharide (Corn Syrup) (1 Tbsp)

Cooking Instructions
Step 1
Boil the quail eggs. To prevent the shells from cracking or the eggs from bursting, it’s best to let them come to room temperature for about 30 minutes to an hour before boiling. Fill a pot with enough water to cover the eggs, add 1 Tbsp of vinegar and 0.5 tsp of salt. Once the water comes to a rolling boil, reduce the heat and simmer for 10-12 minutes. (Tip: You can substitute with regular boiled chicken eggs! If using chicken eggs, peel them before proceeding.)
Step 2
Prepare the baby king oyster mushrooms. Cut larger mushrooms in half and leave smaller ones whole. Set aside with the peeled quail eggs.
Step 3
Make the kelp broth. Place 1 cup (200ml) of water and 1-2 pieces of dried kelp (approx. 5x5cm) in a pot. Bring to a boil over medium heat. As soon as the water boils, remove the kelp to avoid a bitter taste. If you simmer the kelp for too long, it can impart a bitter flavor.
Step 4
Create the delicious braising sauce. To the kelp broth, add 1 Tbsp of minced garlic, 0.2 tsp of ginger powder, 6 Tbsp of soy sauce, 1 Tbsp of oligosaccharide, 0.5 Tbsp of sugar, and 2 Tbsp of cooking wine. Stir well to combine. (Tip: For a cleaner and deeper flavor, you can use thinly sliced whole garlic cloves instead of minced garlic. Adjust the amount of soy sauce to your preference.)
Step 5
Now it’s time to simmer all the ingredients together! Add the prepared quail eggs and baby king oyster mushrooms to the pot with the sauce. Bring to a boil over high heat, then reduce to medium-low, and simmer uncovered.
Step 6
Stir occasionally to ensure the mushrooms and eggs are evenly coated with the sauce as it simmers. Continue cooking until the sauce has reduced and thickened, glazing the ingredients with a beautiful sheen. Taste and adjust seasoning if needed to ensure it’s not too salty. The dish is ready when the sauce is syrupy and clings to the ingredients.
