Essential Ingredients- Cooked Udon Noodles for 2 servings (Boil them beforehand for a great chewy texture)
- 300g Fresh Mussels, cleaned (Wash thoroughly and remove the beards and innards)
- 1/2 Onion (thinly sliced)
- 3 cloves Garlic (thinly sliced)
- 1 stalk Green Onion (cut diagonally)
- 1/3 Carrot (thinly julienned)
- 2 strips Bacon (cut into 1cm pieces)
- 1.5 cups Water (using a paper cup, approx. 270ml)
- Pinch of Salt (for final seasoning)
- Pinch of Black Pepper (for added flavor)
Sauce Ingredients- 2 Tbsp Soy Sauce
- 2 Tbsp Cooking Wine (e.g., Mirin) (removes gaminess, adds umami)
- 1 Tbsp Lemon Juice (adds a refreshing touch)
- 1 Tbsp Minced Garlic
- 2 Tbsp Corn Syrup or Oligosaccharide Syrup (for shine and sweetness)
- 1 Cheongyang Pepper (deseeded and finely minced, adjust for spiciness)
- 1 Red Chili Pepper (deseeded and finely minced, for color)
- 2 Tbsp Soy Sauce

Cooking Instructions
Step 1
Prepare the Ingredients: First, thinly slice the garlic. Wash and peel the onion and carrot, then thinly julienne them. Cut the green onion diagonally into large pieces. Finely mince the deseeded Cheongyang and red chili peppers. Cut the bacon into approximately 1cm pieces for easy eating after stir-frying.
Step 2
Make the Delicious Sauce: In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp lemon juice, 1 Tbsp minced garlic, and 2 Tbsp corn syrup. Mix well to create a flavorful sauce. You can add a little gochujang (Korean chili paste) or oyster sauce if you like.
Step 3
Stir-fry the Aromatic Vegetables: Heat 1-2 Tbsp of cooking oil in a heated pan. Add the sliced garlic and diagonally cut green onion, stir-frying over medium-low heat until fragrant. Once the garlic aroma is released, add the sliced onion, julienned carrot, and cut bacon. Increase the heat to high and stir-fry quickly until the vegetables are slightly translucent.
Step 4
Cook the Mussels: Add the cleaned mussels and 1.5 cups of water to the stir-fried vegetables and bring to a boil over high heat. The mussels will open, releasing a savory broth. Cook for about 2-3 minutes until all mussels have opened. Discard any mussels that do not open.
Step 5
Add Udon and Sauce, Stir-fry to Finish: Once the mussels are cooked, add the prepared sauce and the pre-cooked udon noodles to the pan. Add the finely minced Cheongyang and red chili peppers as well. Stir-fry for another 1-2 minutes, ensuring all ingredients are well combined. Finally, adjust the seasoning with salt and pepper to your taste. Your delicious Mussel Stir-fried Udon is ready!
