Before you begin baking, take the butter and plain yogurt out of the refrigerator to soften at room temperature. Sift the oat flour and soft rice flour together and set aside. In a mixing bowl, cream the softened butter with a whisk until smooth, then add the sugar and mix thoroughly until the sugar crystals are mostly dissolved. Dissolving the sugar well prevents the cookies from becoming hard and ensures a tender texture.

Add the sifted dry ingredients (oat flour, soft rice flour) to the bowl. Using a spatula, gently mix until just combined, ensuring no dry flour is visible. Be careful not to overmix, as this can result in tough cookies. Mixing only until the ingredients are incorporated is key.

Place the dough onto a piece of plastic wrap or parchment paper, form it into a cohesive ball, flatten it slightly, and refrigerate for at least 30 minutes to rest. (Tip: If you use a full container of plain yogurt, the dough might become quite soft. In such cases, allowing sufficient chilling time is essential to firm up the dough, making it easier to handle. If the dough seems too stiff, you can adjust the amount of yogurt.)
