Main Ingredients- 1 pack Aenutari mushrooms (approx. 200g)
- 3 fresh eggs
Basic Seasoning- 1 teaspoon Korean sea salt (approx. 5g)
- 1 teaspoon Korean sea salt (approx. 5g)
Cooking Instructions
Step 1
Gently rinse the fresh aenutari mushrooms under running water. Then, tear them into bite-sized pieces by hand or roughly separate them. Thoroughly pat the mushrooms dry with paper towels or a clean cloth. This step is crucial for achieving a good texture. In a bowl, crack the 3 eggs. Remove the chalazae (the white, stringy bits) for a smoother texture. Add 1 teaspoon of Korean sea salt and whisk well with chopsticks or a whisk until the egg whites and yolks are fully combined and frothy.
Step 2
Add the drained aenutari mushrooms to the beaten egg mixture. Gently mix them by hand to ensure the mushrooms absorb the egg batter well. For better shaping when cooking, slightly flatten the ends of the mushrooms by pressing them gently with the tip of a knife, the back of a spoon, or a blunt object like a pestle. Let the mushrooms soak in the egg mixture for about 5 minutes to absorb more batter, which will result in a richer flavor.
Step 3
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Place the egg-coated aenutari mushrooms onto the hot pan, arranging them neatly. Use a spoon or spatula to gently press down on the mushrooms against the pan’s surface to shape them. This helps them spread evenly and begin to cook.
Step 4
Once the underside is golden brown, carefully flip the pancakes using a spatula. After flipping, gently press down again with the spoon or spatula. This technique ensures that both sides cook evenly to a beautiful golden-brown color and enhances the chewy texture.
Step 5
When both sides are a appetizing golden brown, they are ready. Turn off the heat and transfer the delicious aenutari mushroom and egg pancakes to a serving plate. Despite the simple ingredients, the combination of the aenutari mushrooms’ unique fragrance and chewiness with the richness of the eggs creates an exceptionally satisfying dish.
Step 6
This chewy aenutari mushroom and egg pancake is a wonderful side dish or snack on its own. It also pairs excellently with warm rice or can be enjoyed as a light accompaniment to drinks. Savor the healthy flavors and rich aroma of aenutari mushrooms!
