Main Ingredients

  • 100g Oyster Mushrooms (about half of a 200g pack)
  • 2 Eggs

Cooking Instructions

Step 1

First, prepare 100g of oyster mushrooms. If you’re using a 200g pack, using half of it makes a perfect portion for one person. We’ll be using 2 eggs.

Step 1

Step 2

Gently rinse the oyster mushrooms under running water and pat them dry. Tear them into bite-sized pieces; it’s best to tear them rather than cutting them too finely to maintain a pleasant chewiness. Place the torn mushrooms in a bowl and crack in the 2 eggs. Now, let’s season them: add a pinch of salt, a little soy sauce, a little sesame oil, and a little toasted sesame seeds. The soy sauce, sesame oil, and sesame seeds will add depth of flavor.

Step 2

Step 3

Mix everything together gently with chopsticks or a spatula until the mushrooms, eggs, and seasonings are well combined. It’s important to ensure the mushrooms are thoroughly coated in the egg mixture.

Step 3

Step 4

Heat a frying pan over medium heat and add enough cooking oil. Spoon spoonfuls of the mushroom mixture into the hot pan to form small pancakes. The texture of the pancake can vary depending on the size of the mushroom pieces; larger pieces offer more chewiness but can be harder to shape, while smaller pieces are easier to shape but result in a lighter texture. Adjust according to your preference. Cooking over medium-low heat, rather than high heat, will prevent burning and ensure they cook through completely.

Step 5

These oyster mushroom pancakes, seasoned with just enough flavor, are delicious on their own without any dipping sauce. They make a wonderful side dish for rice, a quick and satisfying snack when you’re feeling peckish, or the perfect accompaniment to a cold beer or makgeolli (Korean rice wine)!
