  • 2 King Oyster Mushrooms (Choose plump and thick ones for the best texture)

Sauce Ingredients
  • 1 pinch of salt
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1/2 Tbsp Ginger Syrup (Saenggangcheong)
  • 1 Tbsp Mirin (or Cooking Sake)
  • 1/3 Tbsp Minced Garlic
  • 1 knob of Butter (approx. 10-15g)
  • A little Cooking Oil

Cooking Instructions

Step 1

First, prepare the king oyster mushrooms. It’s best to choose mushrooms with plump, thick stems for a great texture. Trim off the ends and the caps. (The removed caps can be used in dishes like doenjang jjigae, soybean paste stew.)

Step 2

Slice the prepared king oyster mushrooms into 5-6 pieces. Slicing them not too thinly will give you a pleasantly chewy texture when cooked. Score the mushroom pieces by making cuts without going all the way through, creating a crosshatch pattern. (Optional: Sprinkle a pinch of salt on the scored mushrooms to season them beforehand for enhanced flavor.)

Step 3

Heat a pan over medium heat, add a little cooking oil, and melt the butter. Once the butter is melted, add the king oyster mushrooms and pan-fry them, flipping them over until they are golden brown and slightly crispy. Cook long enough for the buttery aroma to infuse into the mushrooms.

Step 4

When the mushrooms are nicely browned, add all the pre-mixed sauce ingredients (soy sauce, plum extract, ginger syrup, mirin, minced garlic) to the pan. Stir-fry the mushrooms with the sauce, flipping them until the sauce thickens slightly and coats the mushrooms.

Step 5
