Main Ingredients
  • Pork Belly (thick cut) 300g
  • Deodeok (Korean balloon flower root) 400g

Cooking Instructions

Step 1

First, place the thick-cut pork belly in the air fryer and cook at 200°C (392°F) until it becomes crispy, almost like frying. This method utilizes the pork belly’s own rendered fat for a richer, more delicious flavor.

Step 2

Carefully peel the deodeok. Instead of mashing it, cut it into two pieces for each root. This preparation method helps retain the deodeok’s signature crisp texture.

Step 3

Here’s the perfectly air-fried pork belly, golden brown and looking incredibly appetizing.

Step 4

To ensure the pork belly stays juicy and tender, wrap it in aluminum foil and let it rest for a short while. This resting period is crucial for locking in the moisture.

Step 5

After resting for about 10 minutes, slice the pork belly into bite-sized pieces. Then, in a bowl, combine the seasoning ingredients: 2 Tbsp gochujang, 1 Tbsp chojang, 1 Tbsp soy sauce, 2 Tbsp plum extract, 2 Tbsp minced garlic, and 1 chopped green onion. Mix everything thoroughly to marinate the pork.

Step 6

Heat a pan over medium-high heat. Add the marinated pork belly and the prepared deodeok. Stir-fry evenly. Since the pork belly was pre-cooked in the air fryer, the focus is on gently cooking the inside. For the deodeok, stir-fry just enough to retain its crispiness. We’re skipping added sesame oil to keep the dish healthier, as excessive oil can be detrimental to health.

Step 7

Once everything is cooked through, transfer the stir-fry to a serving plate. Finish with a sprinkle of sesame seeds for an aromatic touch. Enjoy your ‘Spicy Pork Belly and Deodeok Stir-fry with Gochujang,’ featuring a delightful combination of textures – the crisp deodeok and the tender, slightly crispy pork belly!
