- 1 stalk Green Onion
- 1 Tbsp Minced Garlic
- 1/6 Carrot
- 1/4 Onion
- 1 bowl Cooked Rice (warm rice)
Pork Marinade
- 1 pinch Salt
- 1 pinch Black Pepper
- 1 Tbsp Mirin (Rice Wine)
Fried Rice Seasoning
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (Rice Wine)
- Pinch of Black Pepper + Pinch of Salt
- 1 Tbsp Sesame Oil
- 1 pinch Salt
- 1 pinch Black Pepper
- 1 Tbsp Mirin (Rice Wine)
Fried Rice Seasoning

Cooking Instructions
Step 1
First, let’s prepare the star of our fried rice: the pork. If you prefer a chewier texture, use pork thigh. For a more tender bite, pork shoulder is a great choice. I used Hi Pork’s pork thigh, which is lean and has a clean taste, making it excellent for fried rice.
Step 2
Marinating the pork will add depth of flavor when stir-fried. To help remove any gamey smell, add 1 tablespoon of mirin. Then, sprinkle in a pinch of salt and a pinch of black pepper. Gently mix to marinate.
Step 3
Now, let’s prepare the vegetables. Finely chop the green onion for making green onion oil. Dice the 1/4 onion and 1/6 carrot as finely as possible. Using too much onion can make the fried rice overly sweet, so use it in moderation.
Step 4
Dice the marinated pork into pieces slightly smaller than bite-sized. If you’re making this for children, you can chop it even finer. Smaller pieces will blend better with the rice for easier eating.
Step 5
Heat 1 tablespoon of cooking oil in a pan and add the chopped green onions. Stir-fry until fragrant to create green onion oil. Green onions and pork are a fantastic combination! The green onion oil cuts through any richness from the pork and adds a subtle aroma, enhancing the fried rice’s flavor. Cook until the green onions are lightly browned and the aromatic oil is released.
Step 6
Once the green onion oil is ready, add all the marinated pork thigh to the pan. Stir-fry until the surface of the pork is cooked and no longer pink. Cooking the pork thoroughly on the outside helps to seal in the juices, ensuring a more flavorful result.

When the pork is mostly cooked, add the finely diced carrots and onions. Stir-fry everything together with the pork. Cook until the vegetables are slightly softened and translucent. The vegetables will absorb the pork’s flavor, making the fried rice even more delicious.

Once the vegetables and pork are fully cooked, add 1 bowl of warm cooked rice. Use your spatula to gently break up any clumps of rice and mix it well with the other ingredients.

Now it’s time to season the fried rice! As a tip from Chef Baek Jong-won, push the rice to one side of the pan, add 2 tablespoons of soy sauce, and let it sizzle and caramelize slightly before mixing it in. This enhances the soy sauce’s flavor. Then, add 1 tablespoon of mirin, a pinch of black pepper, and a pinch of salt. Mix everything thoroughly to season. This amount should be sufficiently seasoned, but if you prefer it saltier, you can add a little more salt for a clean taste. Finally, drizzle in 1 tablespoon of sesame oil for a fragrant finish, and your delicious pork fried rice is ready!
