First, steam the potatoes until they are very tender. You can steam them in a steamer basket for about 15-20 minutes, or microwave them for 5-7 minutes. While the potatoes are still hot, mash them thoroughly. For an extra smooth dough, press the mashed potato through a sieve to remove any lumps.

In a bowl with the sieved mashed potato, add 1 cup of glutinous rice flour, 1/2 cup of all-purpose flour, 1 tablespoon of sugar, and a pinch of salt. Mix these dry ingredients well. If the dough seems too stiff, gradually add 3 tablespoons of water, a little at a time, until it reaches the desired consistency. The dough should be slightly sticky but manageable and not stick excessively to your hands. (Note: The amount of water needed can vary depending on the moisture content of your glutinous rice flour. If you’re using freshly ground flour, it might be wetter, requiring less water. Dry flour will need more.)
