Ingredients (Serves 60)- Potato dumplings 2kg
- Potatoes 8 large
- Carrot 1 medium
- Zucchini 6 small
- Soy sauce for soup 200ml
- Salt 200g
- Black pepper 50g
- Anchovy broth (for approx. 20L water)
Cooking Instructions
Step 1
First, prepare a generous amount of savory anchovy broth, which is key to the deliciousness of this dish. (Boil anchovies, kelp, etc., in about 20L of water to create a flavorful base.)

Next, let’s prepare the vegetables. Wash the potatoes and zucchini, peel them, and slice them into thick half-moon shapes, about 0.5cm thick. Slice the carrot thinly on an angle, about 0.3cm thick; this will give it a pleasant texture when cooked.

Now, pour the prepared anchovy broth into a large pot. Once it starts boiling, add the potatoes, zucchini, and carrots. Let them simmer until the vegetables are tender.

When the vegetables are cooked and the broth is simmering, season with soy sauce for soup, salt, and black pepper to your taste. Then, add the potato dumplings and cook for about 5 minutes, or until they float to the surface. Be careful not to overcook them, as they can become mushy.
