Ingredients- 100g Dark Chocolate
- 60g Glutinous Rice Flour (finely ground)
- 2 Large Eggs
- 60g Brown Sugar
- 8 Fresh Figs
- 1 Tbsp Candied Winter Melon (optional)
- 3 Tbsp Grapeseed Oil
- 2-3 drops Vanilla Extract
- 1/2 tsp Baking Powder
Cooking Instructions
Step 1
Begin by preparing your fresh figs. Wash them thoroughly and cut each fig in half. If you have candied winter melon, you can also set that aside to add a touch of sweetness and texture (this is optional).
Step 2
In a mixing bowl, crack in the 2 large eggs and add the 60g of brown sugar. Whisk or stir well until the sugar is completely dissolved. Ensure there are no gritty sugar granules left for a smooth batter.
Step 3
Add the 3 Tbsp of grapeseed oil and 2-3 drops of vanilla extract to the egg and sugar mixture. Stir until combined. In a separate heatproof bowl, melt the 100g of dark chocolate by placing it over a double boiler (a bowl set over simmering water). Once smooth and melted, gently fold the melted chocolate into the egg mixture.
Step 4
Sift the 1/2 tsp of baking powder and 60g of glutinous rice flour directly into the wet ingredients. Sifting helps prevent lumps and ensures an even texture. If using, add the optional candied winter melon and finely chop 2 of the prepared figs, then gently fold them into the batter. Mix until just combined.
Step 5
Transfer the brownie batter into a piping bag for easy and neat filling. Line a square baking pan with parchment paper. Pipe the batter into the pan, filling it to about 80% capacity. Arrange the remaining halved figs attractively on top of the batter. If you like, sprinkle a few pieces of candied winter melon on top for extra visual appeal. Your brownies are now ready to be baked!
