Chewy Scallion Peppers and Savory Soy-Braised Eggs: A Perfect Side Dish
Super Easy Scallion Pepper and Egg Soy-Braised Dish: Make a Delicious, Quick Side Dish
I made this as a side dish because I had the ingredients, and the chewy shiitake mushrooms and delicious eggs are wonderful. It’s a perfect quick side dish!
Main Ingredients- 5 Eggs
- 5 Korean Green Chili Peppers (Ggwari Gochu)
- 2 Dried Shiitake Mushrooms (or 2 Fresh Shiitake Mushrooms)
- 3/4 cup Soy Sauce (approx. 180ml)
- 2 Tbsp Corn Syrup (or other liquid sweetener, approx. 30ml)
- 1 Tbsp Mirin (Rice Wine for cooking, approx. 15ml)
- A pinch of Toasted Sesame Seeds
- A pinch of Salt (for boiling eggs)
Cooking Instructions
Step 1
First, let’s hard-boil the eggs. Place the 5 eggs and 2 cups of water in a pot. Add about 1/2 teaspoon of salt to prevent the eggs from cracking and to enhance flavor. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10-12 minutes until fully cooked. Once boiled, rinse the eggs under cold water, let them cool slightly, and then peel them.
Step 2
Prepare the Korean green chili peppers. Trim off the stems and wash them thoroughly under running water. To help the sauce penetrate better, you can make a small slit at the tip of each pepper, or leave them whole. Adjust as you prefer.
Step 3
Clean the shiitake mushrooms by wiping off any dirt. Cut them into about 4 equal pieces, making them easy to eat. If using dried shiitake mushrooms, soak them in lukewarm water until softened before using.
Step 4
The base for a flavorful braised dish is a good broth! In a pot, combine 2 cups of water, 6 dried anchovies, and 1 piece of dried kelp. Bring to a boil over high heat. Once boiling, remove the kelp immediately, and let the anchovies simmer for about 5 more minutes to create a savory broth.
Step 5
Remove the anchovies and kelp from the broth. Add 3/4 cup of soy sauce, 2 tablespoons of corn syrup, and 1 tablespoon of mirin to the pot to create the delicious braising sauce base. Feel free to adjust the sweetness to your liking.
Step 6
Add the peeled hard-boiled eggs to the prepared sauce. Braise over medium heat for about 13 minutes, allowing the eggs to absorb the flavor. Gently turn or stir the eggs occasionally to ensure they are evenly coated with the sauce.
Step 7
While the eggs are braising, stir or gently shake the pot once or twice to prevent sticking and ensure the sauce is distributed evenly.
Step 8
Once the eggs have braised for a while, add the sliced shiitake mushrooms. Cover the pot and continue to braise for another 3 minutes. The shiitake mushrooms will absorb the sauce and add a wonderful chewy texture.
Step 9
Finally, add the Korean green chili peppers and braise for just about 1 minute more. The key is not to overcook them, so they retain their crisp texture and fresh aroma.
Step 10
Transfer the finished braised scallion peppers and eggs to a serving dish. Sprinkle generously with toasted sesame seeds. The combination of chewy shiitake mushrooms and savory-sweet eggs is a delightful side dish that will make you want to eat more rice! Store in the refrigerator and enjoy over several days.
