Let’s make a delicious stir-fried sea tangle dish with minimal seasoning, just like my mother-in-law in Busan taught me! We’ll add perilla powder for a nutty flavor, following her cherished recipe. This dish offers a delightful chewy texture and the fresh taste of the ocean, perfect as a side dish or a flavorful accompaniment to drinks.
Main Ingredients- Salted Sea Tangle (Miyuk Julgi) 400g
- 1 Tbsp Minced Garlic
- 1 Tbsp Minced Green Onion
- 2 Korean Red Peppers (Cheongyang Peppers)
- 2 Tbsp Perilla Powder
Seasoning- 1 Tbsp Soy Sauce (Yangjo Ganjang)
- 1 Tbsp Soup Soy Sauce (Guk Ganjang)
- 1 Tbsp Soy Sauce (Yangjo Ganjang)
- 1 Tbsp Soup Soy Sauce (Guk Ganjang)
Cooking Instructions
Step 1
First, it’s crucial to remove the salt from the salted sea tangles. Place the sea tangles in a bowl and rinse them thoroughly by rubbing them with your hands, like washing them vigorously. This step is essential to remove excess salt.
Step 2
After rinsing, soak the sea tangles in cold water for about 30 to 40 minutes to fully leach out the saltiness. This soaking process helps to moderate the salty taste, making the dish more palatable.
Step 3
Once prepped, blanch the sea tangles in boiling water for about 1-2 minutes. This brief blanching effectively removes any fishy odor. After blanching, rinse them under cold water, squeeze out excess moisture, and cut them into bite-sized pieces.
Step 4
Now, let’s begin stir-frying. Heat a generous amount of cooking oil in a frying pan over medium heat. Add the minced green onions and stir-fry until fragrant, creating an aromatic green onion oil. Once the fragrance is released, add the prepared sea tangles and both types of soy sauce (Yangjo Ganjang and Guk Ganjang), and stir-fry quickly.
Step 5
Reduce the heat to medium-low. Cover the pan with a lid and let it simmer for about 10 minutes. This allows the flavors to meld and the sea tangles to absorb the seasoning. Stir occasionally to prevent sticking.
Step 6
When the sea tangles are tender and have absorbed some of the seasoning, add the chopped Korean red peppers and minced garlic. Stir-fry for another 1-2 minutes, ensuring the garlic flavor is present but not overcooked.
Step 7
Finally, generously sprinkle in the perilla powder and stir gently until well combined. This completes your delicious stir-fried sea tangle dish! The perilla powder adds a wonderful nutty depth. Serve warm over rice or enjoy it with a cold beer for a delightful treat.
