Pot Rice Ingredients- 2 cups rice (approx. 360ml)
- 500ml water
- 1 burdock root (approx. 100g)
- 5 fresh shiitake mushrooms (approx. 50g)
- 1/2 carrot (approx. 50g)
- 1/2 green onion
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
Chive Seasoning Sauce- 1/2 bunch garlic chives (approx. 30g)
- 3 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/2 bunch garlic chives (approx. 30g)
- 3 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the rice. Rinse 2 cups of rice lightly under running water until the water runs clear. Then, drain it in a sieve or place it in your rice cooker and add 500ml of water, letting it soak for about 30 minutes. This will make the rice fluffier and more delicious.
Step 2
Now, let’s prepare the vegetables and mushrooms for the rice. Peel the burdock root, slice it thinly, and then cut it into bite-sized pieces (about 2-3cm) or chop it coarsely. Remove the stems from the shiitake mushrooms and slice the caps thinly. Slice the carrot into similar-sized pieces as the burdock root. Finely chop the green onion to add aroma, and wash and cut the garlic chives into 2-3cm lengths for the seasoning sauce.

It’s time to infuse aroma into the sautéed ingredients. Preheat a pot or deep pan over medium heat, add 1-2 Tbsp of cooking oil, and sauté the chopped green onion until fragrant, releasing its aromatic oils (green onion oil). Once the sweet aroma of the green onion rises, your sauté ingredients are ready!
Step 4
We will now stir-fry the prepared vegetables and mushrooms in the green onion oil. Start by adding the firm carrots and sauté for about 1 minute. Then, add the crisp burdock root and continue to sauté for another 2 minutes. Finally, add the fragrant shiitake mushrooms and stir-fry for an additional 2-3 minutes until all ingredients are slightly tender. Stir occasionally to prevent the ingredients from sticking to the pan.
Step 5
Now, let’s add flavor to the sautéed vegetables. Push the vegetables to one side of the pan, and in the empty space, add 1 Tbsp of minced garlic and 2 Tbsp of soy sauce. Sauté them briefly until the garlic is slightly cooked and fragrant. Then, mix everything together and sauté for another minute until the flavors meld. Finally, drizzle in 1 Tbsp of sesame oil for extra aroma, then turn off the heat.
Step 6
Now, we’ll cook the rice. In a rice cooker or pot, add the soaked rice and 500ml of water. Bring it to a boil over high heat. Once the water starts boiling, continue to boil for about 5 minutes. The water will begin to reduce as the rice starts to cook.
Step 7
Once the water comes to a boil, reduce the heat to low. Evenly spread the sautéed shiitake mushrooms and vegetables over the rice. Cover tightly with a lid and cook on low heat for 8-10 minutes, allowing the rice to cook thoroughly and steam. The delicious juices from the vegetables and mushrooms will seep into the rice grains.

After the rice is cooked, turn off the heat and let it steam, covered, for 5 minutes. This step makes the rice even more moist and fluffy. As steam rises from the pot, the enticing aroma of the pot rice will make your mouth water.
Step 9
While the rice is steaming, let’s make the delicious chive seasoning sauce. In a bowl, combine the chopped garlic chives with 3 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp gochugaru, 1/2 Tbsp oligosaccharide, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds.
