Mushroom Jeon Ingredients

  • 16 Shiitake Mushrooms (choose large, plump ones)
  • 8 Pre-made Korean Short Rib Patties (Galbi, adjust to your preference)
  • 2 Eggs (for a golden batter, use fresh eggs)
  • 1/2 cup Pancake Mix (for a crispy finish)
  • 2 Tbsp Sweet Rice Flour (adds a chewy texture)
  • Salt to taste (for seasoning and adjusting flavor)
  • Vegetable Oil, as needed (use generously for a rich, fried flavor)

Galbi Patty Seasoning

  • 2 pinches Salt (to subtly enhance galbi flavor)
  • 1/2 tsp Black Pepper (for a hint of spiciness)
  • 1/2 tsp Garlic Powder (for a mild garlic aroma)

Garnish

  • A little Crown Daisy (for a fresh, aromatic touch)
  • A little Red Chili Pepper (for color and a hint of spice)

Cooking Instructions

Step 1

Carefully trim the tough stems from the base of the shiitake mushrooms using scissors. The stems can be difficult to shape and less enjoyable to eat.

Step 1

Step 2

Make a cross (+) incision on the inside of the mushroom cap with a knife. Then, gently scoop out a small portion of the mushroom flesh with a spoon to create space for the galbi filling. Be careful not to scoop too deeply, or the filling may spill out.

Step 2

Step 3

Wash the prepared shiitake mushrooms by gently massaging them with a little baking soda. This helps reduce any slight bitterness and cleans them thoroughly. After washing, drain them well in a colander.

Step 3

Step 4

Moisture from the mushrooms can make the jeon soggy. Pat the inside and outside of the mushrooms thoroughly dry with clean paper towels. Handle them gently to avoid breaking their shape.

Step 4

Step 5

Lightly coat the inside of each shiitake mushroom with pancake mix. This will help the galbi filling adhere better to the mushroom when frying, preventing it from falling out.

Step 5

Step 6

In a bowl, combine the 8 galbi patties, 2 Tbsp sweet rice flour, a pinch of salt, 1/2 tsp garlic powder, and 1/2 tsp black pepper. Gently mix with your hands until the ingredients are well combined and the galbi forms a cohesive mixture. The sweet rice flour will contribute to a delightful chewy texture.

Step 6

Step 7

Press the seasoned galbi mixture firmly into the hollowed-out shiitake mushrooms. Avoid overfilling; the filling should be slightly taller than the mushroom cap. This will help it cook evenly and maintain its shape.

Step 7

Step 8

Prepare the garnish by washing and roughly chopping the crown daisy and thinly slicing the red chili pepper for color. Whisk the 2 eggs in a bowl, remove the chalazae (egg white strings), and strain through a fine-mesh sieve for a smooth, golden egg batter.

Step 8

Step 9

Heat a frying pan over medium-low heat and add a generous amount of vegetable oil. Dredge each stuffed shiitake mushroom first in pancake mix, then dip into the egg batter, ensuring a thin coating. Carefully place the mushrooms into the hot oil with the filling side facing up.

Step 9

Step 10

Shiitake mushrooms can release moisture while frying. Periodically wipe away any excess oil and moisture from the pan with paper towels. This helps ensure the jeon fries up beautifully crisp and clean. Continue frying in generous amounts of oil.

Step 10

Step 11

Once the bottoms are golden brown, gently place the crown daisy and red chili pepper garnish on top of the galbi filling. Carefully flip the jeon and fry until the other side is also golden brown and the mushroom is cooked through. Your delicious Shiitake Mushroom & Galbi Jeon is ready!

Step 11

Step 12

Transfer the perfectly fried Shiitake Mushroom & Galbi Jeon to a serving plate. Enjoy them immediately while warm to savor the chewy texture and rich flavors.
