Main Ingredients
  • 7 Shiitake mushrooms

Jangjorim Sauce
  • 5 Tbsp soy sauce
  • 3 Tbsp sugar
  • 200ml water
  • 1/2 Tbsp minced garlic
  • 3 Cheongyang peppers
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare 7 shiitake mushrooms. Wash them thoroughly under running water to remove any debris.

Step 2

After washing, pat the shiitake mushrooms dry and then slice them into bite-sized pieces. If you slice them too thinly, the chewy texture might be compromised, so aim for a moderate size.

Step 3

Now it’s time to make the Jangjorim sauce. Pour 5 tablespoons of soy sauce into a pot.

Next, add 3 tablespoons of sugar to bring in the sweetness.

Pour in 200ml of water and stir to ensure the soy sauce and sugar dissolve well.

Add 1/2 tablespoon of minced garlic for an extra layer of umami. If you’re not a fan of strong garlic flavor, feel free to reduce the amount slightly.

Mix all the sauce ingredients well with a spatula, then bring it to a boil over high heat. Once the sauce starts to boil, reduce the heat to medium.

Add all the sliced shiitake mushrooms (7 of them) to the pot.

Stir well to ensure the mushrooms are evenly coated with the sauce. The mushrooms will absorb the seasoning and develop a chewy texture as they cook.
