Soft Tofu Stew
  • Soft tofu 2 packs (800g)
  • Beef for Bulgogi 100g
  • Shiitake mushrooms 100g
  • Cheongyang chili peppers 2
  • Egg 1
  • Green onion 80g
  • Minced garlic 2 Tbsp
  • Regular chili powder 1 Tbsp
  • Fine chili powder 1 Tbsp
  • Sesame oil 2 Tbsp
  • Soy sauce for soup 1 Tbsp
  • Salt 2 tsp

Step 1

Let’s take a closer look at today’s star ingredient, the shiitake mushrooms. Their firm texture and beautiful shape are perfect for soft tofu stew. They contribute a deep, rich broth and a delightfully chewy, almost meaty texture that makes every bite satisfying.

Step 2

Let’s get our ingredients ready! Wash the green onions and Cheongyang chili peppers thoroughly and pat them dry. Give the shiitake mushrooms a quick rinse as well (though you can skip this if they are clean). We’re using bulgogi-cut beef for its ability to enrich the broth with its flavor. We’ll add the beef a little earlier than the tofu so it cooks through nicely and offers a pleasant chew. We have two packages of soft tofu, ready to bring their signature creaminess.

Step 3

Now, let’s prepare the vegetables for cooking. Slice the green onions into about 2-3cm pieces. Thinly slice the shiitake mushrooms, about 0.3cm thick. Break the soft tofu into large, bite-sized chunks. Slice the Cheongyang chili peppers diagonally to enhance their aromatic spice.

Step 4

Gently heat a pot over medium-low heat, then add 2 Tbsp of sesame oil. Once it’s warm and fragrant, add 1 Tbsp of regular chili powder and 1 Tbsp of fine chili powder. Stir them briefly until fragrant, taking care not to burn them. Using a mix of regular and fine chili powder can result in a smoother broth color, which is lovely if you prefer not to see chili powder flakes floating. Turn off the heat for a moment after toasting the chili powder.

Step 5

Now, let’s build our flavorful broth base. Pour 1L of water into the pot with the toasted chili powder. Add 1 Tbsp of soy sauce for soup for umami and 2 Tbsp of minced garlic for aroma and depth.

Add the prepared beef slices to the pot. As the beef cooks, it will release its juices and add a wonderful savory flavor to the broth.

It’s time to add the soft tofu, shiitake mushrooms, green onions, and Cheongyang chili peppers. Let everything simmer together until cooked through. Just before serving, crack 1 egg directly into the simmering stew. The egg will gently poach in the hot broth, adding richness. Once the egg is set, turn off the heat and serve immediately.
