I’ve always used shiitake mushroom stems for braising or fried rice, but today I decided to try stir-frying them. The result was surprisingly delicious and I’m excited to share it with you!

Ingredients
  • Shiitake mushroom stems, appropriate amount
  • 1/4 to 1/2 onion
  • 1 green onion
  • 1 Tbsp minced garlic
  • 1.5 Tbsp soy sauce
  • 0.5 Tbsp oyster sauce
  • 1 Tbsp corn syrup (oligosaccharide)

Cooking Instructions

Step 1

The star of today’s dish is these shiitake mushroom stems. We’ll trim off the hard, dark, dried-out part at the very bottom before using them. This part has a wonderfully chewy texture.

Step 2

Tear the shiitake mushroom stems along their natural grain into bite-sized pieces. This amount won’t be very large, enough for about 1-2 meals. To maintain that chewy texture, it’s best not to chop them too finely.

Step 3

Finely chop the green onion. Slice the onion into strips, using about 1/4 to 1/2 of it depending on the amount of mushroom stems. The sweetness of the onion will blend beautifully with the mushrooms, making it even more delicious.

Step 4

Shall we start stir-frying? Heat some oil in a pan over medium heat. Add the chopped green onion and 1 tablespoon of minced garlic, and stir-fry until fragrant. The aroma of the onion and garlic will rise, adding depth of flavor.

Step 5

Once the aroma of the green onion and garlic is strong, add the sliced onion and stir-fry together. The onion will become translucent and start to release its sweetness.

Step 6

When the onion is slightly cooked, add the prepared shiitake mushroom stems and stir-fry together, mixing well. It’s important not to overcook them to keep their chewy texture intact.

Step 7

As the mushrooms cook, pour 1.5 tablespoons of soy sauce into an empty space in the pan. Let it sizzle for a moment to enhance its flavor, then mix everything together.

Step 8

Next, add 0.5 tablespoon of oyster sauce for an extra savory kick. If you don’t have oyster sauce, a tiny pinch of salt can be used to adjust the seasoning. Feel free to adjust the amount to your preference.

Step 9

Finally, add 1 tablespoon of corn syrup (oligosaccharide) for a glossy finish and a hint of sweetness. Stir-fry everything once more until well combined, and your delicious mushroom stem stir-fry is ready!

Step 10

This flavorful mushroom stem stir-fry is fantastic served over a bowl of hot rice. For an extra treat, top it with a fried egg, break the yolk, and mix it all together like a donburi – it makes for a wonderful meal!
