Main Ingredients
- 4 Shiitake mushrooms
- 100g White soybeans (meju beans)
- 5 cloves Garlic
- A pinch of sesame seeds
Braising Sauce
- 6 Tbsp Soy sauce
- 1 Tbsp Plum extract
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Oligosaccharide
- 1 cup Water (200ml)

Cooking Instructions
Step 1
First, rinse the white soybeans under running water and then soak them in plenty of water for at least 4 hours, or preferably overnight, until fully softened. Drain the soaked soybeans in a sieve and set aside.
Step 2
Gently rinse the shiitake mushrooms under running water to remove any dirt. Then, slice them into quarters or sixths into bite-sized pieces. If the mushroom stems are too tough, you can remove them.
Step 3
Peel and wash the garlic cloves, then slice them thinly into rounds. In a wide, deep pan or pot, combine the soy sauce, plum extract, mirin, oligosaccharide, and water to make the braising sauce. Add the sliced garlic and bring the mixture to a boil over medium heat.
Step 4
Once the braising sauce comes to a boil, add the drained soaked white soybeans and simmer for another moment. After the soybeans have softened slightly, add the sliced shiitake mushrooms. Cover the pot and reduce the heat to low. Let it simmer gently until the mushrooms and beans are well-infused with the sauce. If the sauce reduces too much, add a little water at a time, being careful not to let it burn.
Step 5
When both the mushrooms and beans are tender and the sauce has thickened to a glaze, turn off the heat. Transfer the finished braised shiitake mushrooms and soybeans to a nice serving dish. Sprinkle with sesame seeds for a nutty aroma to complete this wonderful dish!
