[Chewy Shiitake Mushrooms and Sweet Zucchini Bibimbap]
A delicious meal made by mixing zucchini and shiitake mushrooms with a savory soy sauce dressing.
Ingredients- 1 zucchini (medium)
- 4 shiitake mushrooms (medium)
- 1 tsp sesame oil
- 1 bowl of rice
- 1 tsp toasted sesame seeds
- 1 pinch of salt
Seasoning Sauce (for 2+ servings)- 5 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or other sweetener)
- 1 Tbsp perilla oil or sesame oil
- 1 Tbsp crushed sesame seeds
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 5 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or other sweetener)
- 1 Tbsp perilla oil or sesame oil
- 1 Tbsp crushed sesame seeds
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
Cooking Instructions
Step 1
Start by cooking the rice for your bibimbap. Make a generous batch of the seasoning sauce as this recipe is for just over 2 servings. Having extra sauce prepared will be convenient for future meals.
Step 2
Wash the zucchini, trim the ends, and julienne it into strips about 0.5 cm thick. Don’t worry if it looks like a lot; it will shrink considerably when cooked. If using a large zucchini, you might only need half of it.
Step 3
Similarly, clean the shiitake mushrooms, remove the tough stems, and julienne them into strips about 0.5 cm thick. We’re using 4 medium-sized shiitake mushrooms. Fresh shiitake will add a more robust aroma.
Step 4
Heat a little oil in a pan over medium heat. Add the julienned shiitake mushrooms and zucchini and stir-fry them together. Once the vegetables begin to soften and become slightly translucent, add 1 tsp of perilla oil and continue to sauté for another minute. Since you’ll be mixing this with the soy sauce dressing, add just a tiny pinch of salt at this stage. If you have very little vegetables, you can omit the salt.
Step 5
Finely mince the green onion and garlic for the seasoning sauce. Adding a good amount of green onion will provide a pleasant textural contrast and enhance the overall flavor of the bibimbap.
Step 6
Now, let’s make the delicious seasoning sauce. In a bowl, combine 5 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1 Tbsp perilla oil or sesame oil, 1 Tbsp crushed sesame seeds, 2 Tbsp chopped green onion, 1 Tbsp minced garlic, and 1 Tbsp gochugaru. Mix everything thoroughly. If you prefer less sweetness, you can reduce the oligosaccharide to about 1.5 Tbsp.
Step 7
Serve the freshly cooked rice in a bowl. Arrange the sautéed zucchini and shiitake mushrooms attractively on top. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds for extra aroma and flavor. The seasoning sauce is served separately, allowing you to mix it into the rice and vegetables according to your personal preference. Enjoy your delicious, homemade bibimbap!
