Chewy & Spicy Dried Shredded Pollock (Gwipo) Salad
A Quick and Delicious Side Dish or Snack Using Gwipo
I bought this for a snack but it was forgotten in the freezer! I decided to make a delicious side dish with these mini dried shredded pollock (Gwipo). While it’s tasty grilled on its own, it also makes a fantastic side dish! Great for banchan (side dishes) or as an appetizer!
Main Ingredients- 200g Dried Shredded Pollock (Gwipo), cut into bite-sized pieces
Seasoning Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Mayonnaise
- 2 Tbsp Oligodang (corn syrup or rice syrup) – adjust sweetness to taste
- 1 Tbsp Soy Sauce
- A pinch of Sesame Seeds
- A drizzle of Sesame Oil
- 1 Tbsp Mirin (or cooking wine)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Mayonnaise
- 2 Tbsp Oligodang (corn syrup or rice syrup) – adjust sweetness to taste
- 1 Tbsp Soy Sauce
- A pinch of Sesame Seeds
- A drizzle of Sesame Oil
- 1 Tbsp Mirin (or cooking wine)
Cooking Instructions
Step 1
First, prepare the Gwipo. If it was frozen, thaw it. Then, cut it into bite-sized pieces or strips that are easy to pick up with chopsticks, suitable even for children. Next, heat a dry pan over low heat and lightly toast the Gwipo. Be careful not to burn it, toasting both sides until lightly golden. This step enhances the Gwipo’s flavor and makes its texture chewier.
Step 2
While the Gwipo is toasting, let’s make the delicious sauce! In a mixing bowl, combine 2 Tbsp Gochujang, 1 Tbsp minced garlic, 1 Tbsp mayonnaise, 2 Tbsp Oligodang, 1 Tbsp soy sauce, and 1 Tbsp Mirin. You can adjust the amount of Oligodang to suit your preference for sweetness.
Step 3
Mix all the seasoning ingredients together until well combined, ensuring there are no lumps. You can use a spatula or spoon. (Optional: For a deeper flavor, you can lightly simmer the sauce in a pan over low heat for about 1 minute.)
Step 4
Add the lightly toasted Gwipo to the bowl with the sauce. Mix everything together so the Gwipo is evenly coated with the seasoning.
Step 5
We’re almost done! Turn off the heat and add a pinch of sesame seeds and a drizzle of sesame oil. Gently mix everything by hand or with a spatula until the sauce is thoroughly combined with the Gwipo. Your delicious Gwipo salad is ready! Enjoy it as a hearty side dish with warm rice, or as a fantastic appetizer with a cold beer!
