Main Ingredients
- 3 squids (cleaned)
- Gimbap seaweed sheets
- 2 bowls of cooked rice
Rice Seasoning
- 2 Tbsp sesame oil
- 1 tsp salt
- 1 Tbsp sesame seeds
Squid Seasoning
- 2 Tbsp soy sauce
- 3 Tbsp anchovy sauce
- 1.5 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp plum extract (or mirin)
- 2 Tbsp sesame oil
- 1 tsp salt
- 1 Tbsp sesame seeds
Squid Seasoning
- 2 Tbsp soy sauce
- 3 Tbsp anchovy sauce
- 1.5 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp plum extract (or mirin)
Cooking Instructions
Step 1
Thoroughly clean the squid. Score the surface lightly with a knife for better sauce absorption and tenderness, then slice it as thinly as possible. Blanch the squid in boiling water for about 1-2 minutes, then rinse under cold water and drain completely to remove excess moisture.
Step 2
In a bowl, combine the blanched squid with the seasoning ingredients: 2 Tbsp soy sauce, 3 Tbsp anchovy sauce, 1.5 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp plum extract. Gently mix well to coat the squid evenly. Let it marinate for about 5-10 minutes.
Step 3
Cut the gimbap seaweed sheets in half. This size is perfect for making mini gimbap and makes rolling easier.
Step 4
In a separate bowl, season the warm cooked rice with 2 Tbsp sesame oil, 1 tsp salt, and 1 Tbsp sesame seeds. Gently mix using a spatula, being careful not to mash the rice grains. Let the rice cool slightly before using it to prevent the seaweed from becoming soggy.
Step 5
Spread a thin layer of seasoned rice onto one half of a seaweed sheet. Place a portion of the marinated squid over the rice. Leave a small border at the top edge of the seaweed to help seal the roll. Using a bamboo mat or your hands, roll the gimbap tightly and firmly.
Step 6
Lightly brush the outside of the rolled gimbap with sesame oil for a glossy finish and added flavor. You can place it on a bamboo mat and gently press to shape. Cut the gimbap into bite-sized pieces (about 2-3 cm wide) and arrange them on a plate. For cleaner cuts, lightly coat your knife with sesame oil.
