Chewy Stir-Fried Chicken Gizzards: The Perfect Snack with Beer!
Easy and Delicious Stir-Fried Chicken Gizzards Recipe

Introducing a chewy and spicy stir-fried chicken gizzards dish that’s perfect to enjoy with a cold beer after work! I’ll share the secret to making restaurant-quality chicken gizzards quickly and easily at home!
Main Ingredients for Stir-Fried Chicken Gizzards- Chicken Gizzards 300g
- Whole Garlic Cloves 6
- Korean Green Chili Peppers 3
- Green Onion 1/2 stalk (approx. 20cm)
- Salt 1/2 Tbsp (for blanching)
- Black Pepper 1/2 tsp (for blanching)
- Seasoning Powder (spicy flavor) 1 Tbsp
- Cooking Oil, as needed
- Sesame Seeds, a pinch
For Blanching & Removing Odor- Soju 1/2 cup (100ml)
- Salt 1/2 Tbsp
- Black Pepper 1/2 tsp

Cooking Instructions
Step 1
First, it’s crucial to thoroughly clean and prepare the chicken gizzards. Remove any excess fat or impurities attached to the surface and rinse them well under running water.

Step 2
Cut the cleaned gizzards into bite-sized pieces, about 3 equal parts. Place them in a pot, add enough water to cover, and add soju (1/2 cup), salt (1/2 Tbsp), and black pepper (1/2 tsp) to help remove any gamey odor. Bring to a boil.

Step 3
As the water boils, foam will rise to the surface. This foam contains impurities, so skim it off. Continue to boil for another 2-3 minutes. After boiling, rinse the gizzards under cold water to remove any residue and drain them thoroughly in a colander. Ensure they are well-drained to prevent oil splattering when stir-frying.

Step 4
Prepare the vegetables for stir-frying. Finely chop the Korean green chili peppers. Slice the whole garlic cloves thinly or lightly crush them with the side of a knife. Cut the green onion into large pieces. (You can also add sliced onion if you like!)

Step 5
Heat a wok or a deep pan over medium-high heat and add a generous amount of cooking oil. Add the sliced garlic and large green onion pieces and stir-fry until fragrant. Once the aroma of garlic and green onion is released, add the drained chicken gizzards and stir-fry quickly over high heat.

Step 6
Once the gizzards are partially cooked, add the chopped Korean green chili peppers and 1 tablespoon of spicy seasoning powder. Stir-fry everything together. Season with salt and pepper to your taste. It’s best to taste and adjust the seasoning rather than adding too much at once.

Step 7
Finally, sprinkle a pinch of sesame seeds for an extra nutty flavor. Your chewy and delicious stir-fried chicken gizzards are ready! Serve immediately while warm for the best taste.
