  • 1/2 large Onion
  • 1/2 stalk Green Onion
  • 90g Cabbage
  • 1 Green Chili, 1 Red Chili
  • 3 bowls Rice
  • 1 Tbsp Chili Oil
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds
  • 3 Tbsp Flour (for cleaning octopus)
  • 1 Tbsp Vinegar (for blanching octopus)
  • 1 Tbsp Cooking Sake (for blanching octopus)

Sauce

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2.5 Tbsp Soy Sauce
  • 2 Tbsp Corn Syrup or Rice Syrup
  • 2/3 Tbsp Sugar
  • 2 Tbsp Mirin (sweet rice wine)
  • A pinch of Black Pepper

Cooking Instructions

First, locate the thin stringy part at the back of the octopus’s head. Use scissors to carefully cut it off. This step makes the subsequent cleaning process much easier.

Next, turn the octopus head inside out. You’ll find the internal organs; carefully cut them out and discard them. This is a crucial step to remove any unpleasant odor.
