Glutinous Rice Cake Batter- 300g glutinous rice flour
- 1 egg (at room temperature)
- 65g granulated sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 230ml milk
- 50ml heavy cream
- 30g dried cranberries
- 30g chopped walnuts
- 30g sliced almonds

Step 1
The key to delicious baking starts with thorough preparation! Measure and have all the ingredients ready before you begin making the glutinous rice cake. Ensuring the egg is at room temperature will help the batter mix smoothly.

In a large bowl, crack the room-temperature egg and lightly whisk it. Add the sugar and salt, then mix with a whisk until the egg mixture turns a pale yellow color and the sugar has dissolved. Don’t worry about over-mixing at this stage.

Sift the glutinous rice flour and baking powder into the bowl with the egg mixture. Pour in all the milk and heavy cream at once. Mix with a whisk or spatula until no dry flour is visible and you have a smooth batter with no lumps. Be careful not to overmix, as this can result in a tough texture.

Add the dried cranberries, chopped walnuts, and sliced almonds to the batter and mix gently to combine. Ensure the fruits and nuts are evenly distributed throughout the batter.

Thoroughly grease the inside of a round cake pan (approx. 18cm or size #2) with cooking oil or butter. Using parchment paper can also be helpful. Pour the prepared batter into the cake pan and level the surface.

Bake in a preheated oven at 170°C (340°F) for about 60 minutes. The cake is done when a skewer inserted into the center comes out clean. Baking time may vary depending on your oven. Let the cake cool in the pan for a bit before removing it to prevent it from breaking and maintain its shape.
