  • 60g semi-dried baby squid (washed and prepared)
  • 1 Cheongyang pepper (add for a spicier kick)
  • A little carrot (for color and crunch)
  • A little toasted sesame seeds (for nutty flavor)

Cooking Instructions

Step 1

First, thoroughly rinse the semi-dried baby squid under running water. If there are any remaining internal organs, carefully remove them. After rinsing, gently pat the squid dry with a paper towel.

Step 2

Heat about 1-2 Tbsp of cooking oil in a pan over medium heat. Add the prepared baby squid and stir-fry for about 1 minute. This helps to remove any fishy odor and slightly cook the squid. Be careful not to burn it.

Step 3

Once the baby squid is partially cooked, pour 3 Tbsp of soy sauce along the sides of the pan. This allows the soy sauce to sizzle and release its aroma, helping the squid absorb the delicious seasoning. You can also mix in a little oyster sauce or soup soy sauce if you like.

Next, add 2 Tbsp of oligosaccharide for sweetness and 2 Tbsp of cooking wine (mirin) to eliminate any gaminess and add a nice sheen. You can use corn syrup instead of oligosaccharide. Stir everything well to ensure the ingredients are evenly combined.

Finally, add the finely chopped Cheongyang pepper for spiciness and thinly julienned carrot for color and a crisp texture. Stir-fry for another 1-2 minutes over medium heat until everything is well combined. Keep the heat at a medium level.

Once everything is evenly stir-fried, turn off the heat and sprinkle with toasted sesame seeds for a final touch of nutty flavor.
