  • 1/4 chocolate genoise (or plain castella cake)
  • Approx. 60ml warm water (for dough)

Seasoning & Others

  • Pinch of salt
  • 1-2 Tbsp sugar (adjust to taste)
  • Sieve (for genoise crumbs)
  • Pot (for boiling)
  • Cold water (for cooling)

Cooking Instructions

Step 1

First, finely sieve the chocolate genoise (or castella cake) to create crumbs. Using a sieve will ensure smooth, lump-free crumbs.

In a bowl, combine the glutinous rice flour with sugar and a pinch of salt. Gradually add warm water, a little at a time, while mixing to form a dough. It’s crucial not to add too much water at once; add it spoonful by spoonful, checking the dough’s consistency. The dough should be firm, similar to the texture of songpyeon (Korean rice cakes). Taste a small piece of the dough to adjust the sweetness if desired.

Once the dough is ready, divide it into bite-sized portions and roll them into small balls to form the glutinous rice balls. This is a great activity to do with children!

Fill a pot with plenty of water and bring it to a rolling boil. Carefully drop the shaped glutinous rice balls into the boiling water.

When the rice balls float to the surface, indicating they are cooked, turn off the heat. Let them simmer for about 30 seconds, then carefully remove them from the pot. Be cautious as they will be hot. Immediately transfer the cooked rice balls into a bowl of cold water to cool them down. Cooling in cold water enhances their chewy texture.

Drain the cooled rice balls thoroughly using a sieve. Place the drained balls into a bowl containing the prepared castella crumbs. Gently roll the balls around to coat them evenly with the crumbs. You can also tilt and shake the bowl slightly, allowing the balls to tumble and pick up the crumbs naturally.
