As I get older, I find myself reminiscing about the foods my mother used to make, and sometimes I get a sudden urge to recreate them. Now that sweet potatoes are in season and delicious, it’s the perfect time to make them as a snack! These sweet potato cakes are wonderfully chewy and incredibly easy to make.

Ingredients
  • 1 large Korean sweet potato (Bambam variety preferred)
  • Flour, as needed
  • Pinch of salt
  • Water, for misting

Cooking Instructions

Step 1

First, wash the sweet potato thoroughly, peel it, and then cut it into bite-sized pieces, about 2-3 cm in size. Cutting them too small might cause them to mash up, so aim for a suitable size.

Step 2

In a large bowl, combine the cut sweet potato, flour, and salt. Do not add any water at this stage. Gently mix everything together so that the moisture from the sweet potato, flour, and salt begin to combine.

Step 3

Fill a spray bottle with water and lightly mist the sweet potato and flour mixture. You’re not aiming for a dough, but rather coating the sweet potato pieces so the flour adheres and clumps slightly, binding them together. It’s okay if some dry flour is still visible.

Step 4

Once the flour is adhering well to the sweet potato pieces, line a steamer basket with a cheesecloth or a clean kitchen towel. Place the coated sweet potato pieces into the steamer. For a nice shape, slightly mound the mixture around the edges and create a slight indentation in the center.

Step 5

Cover the steamer with a lid and bring the heat to high for about 5 minutes to generate steam. Once the steam is actively rising, reduce the heat to medium and let it steam for another 10-15 minutes to allow it to cook through. The steaming time may vary depending on the size and quantity of sweet potatoes.

Step 6

To check for doneness, carefully remove one piece and pierce it with a fork or chopstick. It should be tender and yield easily. If you see too much raw flour, lightly mist it with water again using the spray bottle, cover, and steam for an additional few minutes.

Step 7

Remove the steamed sweet potato cakes from the steamer and let them cool slightly. While delicious warm, they become even chewier and tastier as they cool. The flour coating offers a pleasant savory chewiness, complementing the naturally sweet and soft sweet potato. Enjoy your delicious homemade sweet potato cakes!
