The Perfect Balance of Sweet and Salty! Easy Recipe for Chewy Myeongyeopchae Stir-fry
This is the perfect side dish for when you don’t have much of an appetite! We stir-fried Myeongyeopchae with a delicious sweet and savory sauce, and it turns out perfectly as a simple banchan. Its chewy texture and rich flavor make it a family favorite.
Main Ingredients- 100g Dried Shredded Squid (Myeongyeopchae), cut into bite-sized pieces
- 2 Tbsp Soy Sauce
- 1 tsp Minced Garlic
- 1 Tbsp Oligosaccharide (or corn syrup, adjust sweetness)
- 1 Tbsp Cooking Wine (Mirin or Sake, to remove any fishy smell)
- 1/2 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare 100g of Myeongyeopchae. Cut it into bite-sized pieces, about 3-4cm long. It’s best not to cut it too small to maintain a pleasant chewy texture.
Step 2
Before stir-frying with the main sauce, lightly toast the Myeongyeopchae in a dry pan over medium heat for 1-2 minutes. This step helps to reduce any potential fishy odor and enhances its flavor and texture.
Step 3
Transfer the lightly toasted Myeongyeopchae to a separate plate and let it cool slightly. This cooling step allows the Myeongyeopchae to absorb the sauce better later on.
Step 4
Now, let’s make the sauce. Wipe the pan used for toasting, or use a clean pan. Turn off the heat, and add 2 Tbsp of soy sauce, 1 Tbsp of oligosaccharide, 1 tsp of minced garlic, and 1 Tbsp of cooking wine.
Step 5
Place the pan over low heat and stir the sauce ingredients until well combined. Let it simmer gently for about 30 seconds to 1 minute until it slightly thickens. Once the sauce is simmering, reduce the heat to very low, add the prepared Myeongyeopchae, and gently toss to coat evenly with the sauce.
Step 6
Continue to stir-fry over low heat for another 2-3 minutes, ensuring the sauce coats the Myeongyeopchae evenly. You’ll achieve a wonderfully chewy and flavorful result. Just before turning off the heat, add 1/2 Tbsp of sesame oil, a sprinkle of sesame seeds, and a pinch of black pepper (optional, to taste). Stir lightly to combine, and your delicious Myeongyeopchae stir-fry is complete! Serve it immediately with warm rice.
