Chewy & Sweet Snack: Easy Tteokguk Tteok Rosé Stir-fry

Whip up a delightful snack with leftover tteokguk tteok! This easy Rosé Tteokbokki is perfect for kids’ snacks or a quick bite when you’re feeling peckish. Experience the fantastic combination of chewy rice cakes, soft scrambled egg, and sweet rosé sauce!
Key Ingredients- 200g Tteokguk Tteok (rice cakes for soup)
- 1 Egg
- 1/4 Onion (or to taste), thinly sliced
- 1/2 Tbsp Butter
Cooking Instructions
Step 1
First, rinse the tteokguk tteok lightly under cold water to remove any starchy residue, then drain them well in a sieve. Thinly slice the onion.
Step 2
Crack 1 egg into a bowl and whisk it thoroughly with a fork or chopsticks until the yolk and white are well combined, creating an egg mixture.
Step 3
Heat a pan over low heat and melt the 1/2 Tbsp of butter. Once melted, add the sliced onions and a dash of pepper for aroma.
Step 4
Sauté the onions over low heat until they become translucent. It’s important to cook them gently without burning to bring out their natural sweetness.
Step 5
Once the onions are tender, add the drained tteokguk tteok to the pan and stir-fry them together. Keep stirring to prevent sticking and lightly sear the surface of the rice cakes.
Step 6
When the rice cakes are partially cooked, pour the prepared egg mixture around the edges of the pan, letting it flow amongst the tteok.
Step 7
As the egg begins to set, gently stir and scramble it with the rice cakes. Mix everything softly so the egg is evenly distributed.
Step 8
Now, add 2 Tbsp of rosé spaghetti sauce and mix well with all the ingredients. Ensure the sauce coats everything evenly, achieving a nice creamy consistency.
Step 9
Continue to stir-fry for another 1-2 minutes until the sauce is well blended with the tteok and other ingredients. Finally, transfer the delicious Rosé Tteok Snack to a plate and serve!
