Introducing a special dish that carries my mother’s culinary touch: Jjolmyeon and Whelk Salad, affectionately known as ‘Jjol-baeng-i’. Main Ingredients- Jjolmyeon noodles 200g
- 1 can of whelks (including the liquid)
- Lettuce 20g
- Red cabbage 20g
- Onion 20g
- Cucumber 20g
- Carrot 20g
- Perilla leaves 20g
- A pinch of sesame seeds
- A little sesame oil
Seasoning Sauce- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Maesil-cheong (Plum syrup) 2 Tbsp
- Soy sauce 1 Tbsp
- Sugar 1 Tbsp
- Vinegar 3 Tbsp
- Lemon juice 1 Tbsp
- Minced garlic 1 tsp
- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Maesil-cheong (Plum syrup) 2 Tbsp
- Soy sauce 1 Tbsp
- Sugar 1 Tbsp
- Vinegar 3 Tbsp
- Lemon juice 1 Tbsp
- Minced garlic 1 tsp
Cooking Instructions
Step 1
Boil the jjolmyeon noodles in boiling water for about 5 minutes. To prevent them from sticking together, it’s a good idea to stir them occasionally while cooking.
Step 2
Once boiled, immediately rinse the jjolmyeon noodles in cold water, preferably ice-cold water, to cool them down and make them firm. This step ensures the noodles become extra chewy.
Step 3
Wash all the prepared vegetables: lettuce, red cabbage, onion, cucumber, carrot, and perilla leaves. Chop them into bite-sized pieces. In a separate bowl, combine all the seasoning sauce ingredients (gochujang, gochugaru, maesil-cheong, soy sauce, sugar, vinegar, lemon juice, and minced garlic) and mix well to create the sauce.
Step 4
Add a little sesame oil to the prepared sauce and mix thoroughly to enhance its aroma. (Tip: Adding sesame oil to the sauce will give it a richer, nuttier flavor and a smoother consistency.)
Step 5
Arrange the drained jjolmyeon noodles in a serving bowl, swirling them into neat portions. Place the seasoned whelks and chopped vegetables generously on top of the noodles. Serve with the prepared sauce on the side, and mix everything together to enjoy this delicious dish.
