  • 500g pre-cooked octopus (already cooked)
  • 1.5 bowls of warm sushi rice
  • 3 Tbsp rice vinegar
  • 1.5 Tbsp sugar
  • 1/2 tsp salt
  • Wasabi, to taste

Cooking Instructions

Step 1

Briefly Blanch the Octopus: Since the octopus is already cooked, we’ll only blanch it very briefly for sushi. Bring water and an equal amount of cooking sake (or mirin) to a rolling boil in a pot. Add the pre-cooked octopus and immediately remove it after 10-20 seconds. Be careful not to overcook, as it can become tough. Let it cool slightly after blanching.

Step 2

Slice the Octopus: Once slightly cooled, slice the octopus into bite-sized pieces suitable for topping sushi. Typically, thin slices or small, neat cubes work well. Adjust the thickness according to your preference.

Step 3

Assemble the Octopus Sushi: Now, let’s make the sushi! In a bowl, combine the warm sushi rice with the prepared sushi vinegar (a mixture of rice vinegar, sugar, and salt). Gently fold and mix with a rice paddle until well combined and each grain is coated, ensuring it’s not mushy. (Counting the grains is just for fun! 😉) Shape the sushi rice into oblong mounds, spread a small dab of wasabi on top, and then place the sliced octopus over the wasabi.
