Main Ingredients- 1 pack (approx. 400g) chicken tenderloin
- Lettuce or Romaine leaves
- 1 tomato
- 4 slices of bread
- Mayonnaise
- Black pepper
- Sugar
Dressing Ingredients- 1/2 tsp whole grain mustard
- 2 Tbsp mayonnaise
- 1/2 tsp whole grain mustard
- 2 Tbsp mayonnaise
Cooking Instructions
Step 1
First, wash the tomato thoroughly and slice it into 0.5cm thick rounds. Place the sliced tomatoes on a paper towel to absorb excess moisture. This step helps prevent the sandwich from becoming soggy.
Step 2
Carefully cut the whole almonds in half using a knife. Preparing them this way will enhance the textural variety when you bite into the sandwich.
Step 3
Boil the chicken tenderloins in water until they are tender and cooked through. Simmer for about 15-20 minutes, or until the chicken is fully cooked.
Step 4
Once cooked, let the chicken tenderloins cool slightly. Then, process them in a blender until finely ground. If you don’t have a blender, you can easily shred the cooked chicken finely with your hands for a different texture.
Step 5
In a bowl, combine the ground (or shredded) chicken with mayonnaise and black pepper. Mix well. Taste and add a tiny pinch of sugar if desired, which can subtly enhance the overall flavor profile.
Step 6
In a small bowl, whisk together the whole grain mustard and mayonnaise to create the sandwich spread. The zesty kick of the mustard combined with the creaminess of the mayonnaise will wonderfully complement the chicken mixture.
Step 7
Now, let’s gather all the sandwich components. Have your clean, patted-dry lettuce (or romaine), the drained tomato slices, the prepared chicken salad, and the halved almonds ready.
Step 8
Spread a generous layer of the prepared mustard-mayonnaise sauce onto one side of each slice of bread. Don’t be shy with the sauce; it ensures a moist and flavorful sandwich.
Step 9
Arrange the lettuce (or romaine) leaves neatly on top of the sauced bread. Follow with the drained tomato slices, layering them over the lettuce.
Step 10
Pile a generous amount of the chicken salad mixture on top of the tomatoes. A hearty filling makes for a truly satisfying sandwich. Finally, sprinkle the halved almonds evenly over the chicken salad.
Step 11
Place the remaining slice of bread on top to complete your delicious Chicken Almond Sandwich. For easier eating, you can cut the sandwich in half diagonally with a sharp knife.
