Main Ingredients

  • 1/2 chicken breast (approx. 50g)
  • 1 potato (approx. 55g)
  • 10g carrot
  • 30g onion
  • 2 walnut halves (split in two)

Braising Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp organic brown sugar (or 1/2 Tbsp regular sugar)
  • 1 piece dried kelp (2cm x 2cm)
  • 200ml water

Cooking Instructions

First, dice the chicken breast, potato, carrot, and onion into small, bite-sized cubes. Cutting the ingredients to a similar size helps them cook evenly.

Lightly oil a pan and add the diced potatoes, carrots, and onion. Sauté over medium-low heat until they begin to soften. Then, add the chicken breast and continue to stir-fry until the chicken is lightly browned on all sides.

Once the chicken is lightly browned and the onion becomes translucent, pour in the 200ml of water and bring to a boil over high heat. You can adjust the water level to ensure the ingredients are mostly submerged.

As the water starts to boil, add 1 tablespoon of soy sauce and the sugar. I used organic brown sugar, which is less sweet, so I used an equal amount of soy sauce. If you are using regular sugar or corn syrup, reduce the amount to 1/2 tablespoon to account for its sweetness. For a baby snack, you can further reduce or omit the sugar.

Add the piece of dried kelp (2cm x 2cm) for added umami and let it simmer gently. The kelp will infuse the stew with a delicious savory flavor.

Cover the pan with a lid and let it simmer over medium-low heat. This allows the flavors to meld together and the ingredients to cook through gently.

Check if the sauce has reduced to your desired consistency and if the potatoes and chicken are tender. Once cooked, finely chop or crush the 2 walnut halves and stir them into the stew, mixing well to coat everything with the sauce.

I prefer a slightly saucy consistency, so I stopped here. If you like a drier dish, you can continue to simmer with the lid off until the sauce is almost completely reduced. For very young babies, you can omit the walnuts or grind them very finely. Serve this chicken and potato stew warm with rice for a wonderful meal.
