Main Ingredients
  • 200g salted kelp (soaked in cold water to remove salt)
  • 80g chicken breast (cooked and prepared)
  • 50g red bell pepper (julienned)
  • 50g yellow bell pepper (julienned)
  • 10 stalks chives (blanched and prepared)

Sauce
  • 2 Tbsp store-bought cold salad dressing (or your favorite Gochujang-based sauce)

Cooking Instructions

Step 1

Thoroughly soak the salted kelp in cold running water for at least 30 minutes to remove all the saltiness. Rinse well, drain any excess water, and then cut it into neat rectangular pieces.

Step 2

Blanch the chives in boiling water for a very short time, about 3 seconds. This will help preserve their vibrant green color while making them tender.

Step 3

Immediately rinse the blanched chives in cold water to cool them down. Then, gently squeeze out as much water as possible by hand. Excess water can cause the rolls to unravel.

Step 4

Remove the seeds from the bell peppers and julienne them into thin strips, ensuring they are not too thin so they hold their shape well when rolled. Using both red and yellow bell peppers will make the rolls visually appealing.

Step 5

Shred the cooked chicken breast along the grain into bite-sized pieces. Shredding them to a moderate thickness, rather than too thinly, will provide a better texture when eaten.

Step 6

Now it’s time to roll. On one piece of prepared kelp, arrange 2-3 pieces of shredded chicken breast and 3-4 julienned strips of each color of bell pepper (red and yellow) attractively. Tightly roll up the kelp. Finally, wrap the blanched chives around the roll to secure it firmly. If tying with chives is difficult, you can tie the roll first and then trim any excess chives for a neat finish.

Step 7

Serve the finished chicken breast, bell pepper, and kelp rolls with the store-bought cold salad dressing for an extra burst of flavor. They are also delicious dipped in a tangy and sweet Gochujang-based sauce. For a guilt-free, healthy meal, enjoy them plain. This recipe is nutritionally well-balanced and can be considered a nearly perfect healthy meal.
