- 200g Shirataki Noodles
- 1 Tbsp Vinegar (for blanching noodles)
- 100g Chicken Breast
- 1 handful Red Cabbage (thinly julienned)
- 1 handful Cabbage (thinly julienned)
- 10 Fresh Basil Leaves (thinly julienned)
Dressing Ingredients
- 4 Tbsp Balsamic Vinegar
- 1 Tbsp Olive Oil
- 1/2 Tbsp Oligodang (or honey/maple syrup)
- 2 pinches Salt

Cooking Instructions
Step 1
Bring 1 cup of water to a boil in a pot. Add 1 tablespoon of vinegar and the 200g of shirataki noodles. Stir well and blanch for 1-2 minutes. Adding vinegar helps to neutralize any ‘konjac’ odor.
Step 2
Immediately rinse the blanched shirataki noodles under cold running water. This step is crucial for achieving a firm, chewy texture. Drain them thoroughly in a colander, pressing gently to remove as much water as possible.
Step 3
Thinly julienne the red cabbage, cabbage, and fresh basil leaves. Soak the julienned vegetables in cold water for about 5 minutes to make them extra crisp and fresh. After draining, use a salad spinner or pat them dry with paper towels to remove excess moisture.
Step 4
Prepare the 100g of chicken breast by slicing it into bite-sized pieces or leaving it as is. Microwave for 2-3 minutes until warmed through. (Alternatively, you can lightly pan-sear it.)

In a small bowl, combine the dressing ingredients: 4 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, 1/2 tablespoon of oligodang, and 2 pinches of salt. Whisk until well combined to create a flavorful dressing.
